BLUE SPIRULINA SMOOTHIE BOWL - VEGAN: 2 frozen bananas 1/2 cup frozen mangoes 1/4 cup frozen pineapple 1 tsp blue spirulina powder couple splashes of plant milk 2. RAW VEGAN RAINBOW SUSHI ROLLS + SRIRACHA MAYO: Sushi Rice (seasoned with salt, pepper, garlic powder, toasted sesame oil) Add some cooked rice to a nori sheet and then top with any veggies you like (I used bell peppers, red cabbage, cucumber, carrots) Roll up and slice with sharp knife! Drizzle with Sriracha Mayo (2-3 T of vegan mayo + 1-2 T sriracha) Sprinkle with white or black sesame seeds and serve with soy sauce. 3. VEGAN CHICKPEA, QUINOA, & ROASTED VEGGIE BUDDAH BOWL: -Cook the quinoa according to package instructions. -Add your veggies (cauliflower, sweet potatoes, brussel sprouts) to a baking sheet and drizzle with avocado oil, salt, pepper, cumin, garlic powder and add a little cinnamon, ginger and nutmeg to the sweet potatoes. Stir and set aside. -Drain and rinse 1 can of chickpeas then season with salt, pepper, garlic powder, and smoked paprika.
