Pratik Gandhi's Recipe Recipe Name :- Savoury Pancake with Tofu Satay Ingredients 2 blocks Firm Tofu For marination: ½ cup Coconut milk 2 tbsp Thai red curry paste Salt to taste 3 Chopped garlic ½ tsp Cumin powder 2 tbsp Sugar For sauce: ¼ cup water 1 tbsp smooth Peanut Butter ¼ cup Soya Sauce ¼ cup Rice Vinegar 2 tbsp Sugar 2 tbsp Peanut Oil 2 tsp chopped garlic 2 tbsp chilli garlic sauce ¼ tsp Turmeric Powder For spring onion pancake: 2 cup All purpose flour Water 2 tbsp oil Salt 1 cup chopped spring onion greens Method: - For marination, combine all the ingredients in a bowl and add tofu and let it rest for 30 minutes. - For the sauce, combine all the ingredients in a pan and bring it to a boil. Simmer it until it becomes thick. Divide the sauce into two. - Heat a grill pan and place the marinated tofu. Brush with sauce and cook on both the side. Chef Ranveer Brar's Recipe Recipe Name :- Pancake Roll Satay Ingredients 2 blocks Firm Tofu For Marination: 1/4 cup Coconut Milk 2 tbsp Thai Red Curry Paste 2 tbsp Peanut Butter Salt to taste 3 Chopped garlic ½ tsp Cumin powder 2 tsp Sugar For sauce: ¼ cup water 1 tbsp Smooth Peanut Butter ¼ cup Soya Sauce ¼ cup Rice Vinegar 2 tbsp Sugar 2 tbsp Peanut Oil 2 tsp Chopped Garlic 2 tbsp Chilli Garlic Sauce ¼ tsp Turmeric Powder Salt to taste For spring onion pancake: 2 cup All purpose flour Water Salt 1/4 tsp Pepper Powder 1 Spring Onion Bunch Oil for cooking Method - Grind the spring onion green in paste. - In a bowl add flour, salt, pepper powder, spring onion green and water. Make a batter and keep aside. - In another bowl add, coconut milk, peanut butter, thai curry paste, garlic, cumin powder, sugar and salt. Mix it well and marinade tofu. - Skewer the tofu on satay sticks and cook it over the griddle pan or tawa. - Heat crepe pan or non-stick pan pour a ladle of crepe batter and cook it. Place tofu satay and wrap it around and cook for another minute. - For sauce, heat oil in a pan add garlic and saute. Add turmeric powder and saute for a minute on slow flame, add peanut butter, soya sauce, vinegar, sugar, chilli garlic sauce and water. Bring it to boil on high flame, simmer and cook until sauce is slightly thick add salt and mix well.
