Greg does simple math to show the efficiency of 1000 lb cows over 1500 lb cows. It just comes down to conventional math. The bigger the animal, the more they cost you to feed them on a daily basis. For every 100 lbs you increase the cow size over 1000 lbs, you lose 2% fertility on that animal.
