It took me a long time before I realized one of my favorite chain burgers secret was the sweet pickle relish on top. The burger itself was mediocre, but the topping put it over the top. With a bit of tweaking, I found a sweet pickle relish recipe that worked great. Here it is: Makes 2 quarts: 7 Cups chopped cucumbers 1 Sweet onion (chopped) 3 Tbsp Salt 2 cups Apple Cider Vinegar 1 cup Sugar (some go as high as THREE cups) 2 tsp Mustard seeds 1 tsp Celery seeds (optional) Chop up the cucumbers and onion. Add them to a large bowl and add the salt. Add enough cold water to cover and let sit at room temperature for two hours (or four in the fridge). Drain and rinse the cucumber brine. Rinse it a couple of times to make sure you get it all off. For the brine, add the apple cider vinegar, sugar, mustard seeds, and celery seeds to a pot. Then add the cucumber onion mixture and bring to a boil for about 10 minutes. Let cool in glass jars and put in the fridge for at least 24 hours, but 2-3 days is better. It should keep in the fridge for a couple of weeks. You can also can this recipe in a water bath canner to keep it at room temperature. Follow the directions for the canner and adjust processing time for your altitude.
