Beer and Pork, two of our favorite things… Today, we're celebrating both with Drunken Pork Chops! This is a simple sear then simmer dish. Bone in "thick cut" loin end pork chops take center stage along with a nice Octoberfest style beer. Very few ingredients, but the taste and tenderness are something to write home about. While eating dinner, one of our guests actually declared it was the best pork chop he ever ate… If you see this in time (Prior to 10/20/2019), be sure to join us at our next Dutch Oven Gathering Hosted by Hops on the Hill in South Glastonbury, CT https://www.facebook.com/events/856965578038281/ Ingredients for a 6 quart 12 inch "regular" Dutch Oven: 2 -3 Tbsp. Olive Oil 6 1.25 - 1.5 inch pork chops 2 medium sweet onions 6 cloves of garlic 1 and a half Octoberfest style beers (reserve the remaining 1/2 beer for the chef) 1/2 cup dark brown sugar 1 cup Ketchup Salt and pepper to taste Instructions: Lay Down a bed of hot coals to prepare the Dutch Oven for searing. Add olive oil and wait for it to come up to temperature. Sear off each side of the chops, roughly 5 minutes a side. We had to do it in shifts. Remove pork, add in onions sliced into rings and crushed garlic. Then add a bottle of beer to keep vegetables from burning. Now mix in the brown sugar and ketchup. Layer chops on top of onions (they act as trivets protecting the port from burning). Add salt and pepper to taste and add in the other half beer to almost cover the chops. Let simmer for an hour. Chops will cook to about 90 - 100 degrees F. Probe to ensure they are over minimum 145 degree doneness temp. However, you want these fall apart tender, so go more by probe feel than exact temp. It should feel like probing butter. Plate up and enjoy, ensuring you collect all the onions and garlic for piling high on your chops. Optional: Bring the liquid back to a simmer. Whisk in a few tablespoons of Wondra to thicken into a mighty tasty gravy.
