The day we've all been waiting for, they're finally ready. 1/2 of our jewels cured in just over 4 weeks. It was a good year for curing meat, the temps were very cooperative. Also, we trim ours down to just the single solid muscle, which also speeds their cure time. In this video, we show you the end result of our hard work. In addition to explaining the doneness test and preservation techniques, we also answer some of the questions we got from the previous video in this series. Enjoy!
