Learn about beer malting from the brewers of Guinness in St. James's Gate, Dublin. Barley is primary key in the malting process. When malted, it's called malted barley. You can also have malted wheat and malted rye. Malting is a process not a thing. We soak the raw barley and allow it to germinate, so it starts to grow roots. After a number of days, that process is arrested and the grain is dried. You apply heat to it to lock in the flavor. There are three basic malts: chocolate malts, lager malts and ale malts. With lager malts, we don't apply much heat because you want the color to be more clear. With ale malts, the amber color comes through and more heat is applied. Chocolate receive even more heat and have a slightly darker color. Malting is very much an art. All of these processes have quite a bit of science, but it is the art of the maltster joined with the art of the brewery to deliver the right malt character. Malt is grain that's been germinated and dried to make its sugars available for fermentation.
