Please skip to 1:44 to see the process of me cutting and cleaning the fish https://www.youtube.com/watch?v=0IpaW17Nd4c Cleaning Ingredients: 4 pounds of red snapper fish 3 Limes Salt 1 cup of white vinegar Seasoning Ingredients: Garlic salt 1 tablespoon of hot sauce 1 tablespoon of lime juice 2 tablespoon of haitian epis 1 tablespoon of sofrito Cooking Ingredients: 2 tablespoon of olive oil 2 tablespoon of tomato paste 1 tablespoon of regular butter 2 tablespoon of coconut milk (optional) green and red bell peppers 1 whole white onion parsley/thmye (optional) Directions: 1. In a small container, soak fish with cleaning ingredients for at least 10 minutes. After 10 minutes, clean the fish throughly at least 3 times with lime and lemon and rinse with cold water. 2. Remove extra scales with a knife, on top of fish, near the fins, scraping around tail, near the head and take out unwanted portion inside at the base of the head. 3. Clean fish with lime halves inside and out up to the jaw, then rinse with cold water. 4. Marinate fish with seasoning ingredients for at least 1 hour. 5. On medium high heat , put the oil and add the tomato paste to make the sauce and add half a cup of water to dilute the tomato paste. After that add the fish and pour 1 cup of water to cook the fish After 10 minutes has passed, add the coconut milk to the sauce (optional) Strain whatever leftover seasoning ingredients and add the fish juice or broth to the sauce. add the butter, hot pepper, bell peppers, parsley/thyme & onions and let it cook for 2 minutes on medium high heat. Let it simmer for 20 minutes on medium low heat and voila your fish is now ready to eat
