This delicious spread made from raw cashews is a must have in our kitchen. Seriously, we are never without it because we use it so much. Georgie shows you how simple it is to make this spread and we show you how to use it as a creamy salad dressing or to add some yumminess to other dishes. Following is the recipe: CASHEW CHEESE SPREAD Prepared by the Happy Vegan Couple *for your health, use organic ingredients when possible* Ingredients 2 cups raw cashews 2 Tbsp miso-whatever type you enjoy 4 Tbsp of fresh lemon juice 4 Tbsp of apple cider vinegar Water: 1 cup or use the amount for your desired consistency Instructions 1. Combine all the ingredients in a Vitamix blender and process until smooth. Add 1 cup water with the other ingredients. As you blend, if you want it thinner you can add a bit more water to thin to your desired consistency. We keep it fairly thick; you might compare it to sour cream or mayonnaise. We like to use this as a spread so we don’t want it thin. When it’s used for a salad dressing, then we thin it out with some water in a mug. If you have a less powerful blender, soak the cashews first in hot water for about 1 hour to soften. Then drain the water and put the cashews in the blender with the other ingredients. This spread can be turned into a delicious creamy salad dressing by taking 1-2 tablespoons and just diluting it with a bit of water. Stir and enjoy the creamy yumminess of this no oil dressing. This spread is great on a tortilla or burrito before you add the other ingredients. Try spreading some on some healthy whole grain bread and then grilling it on a non-stick pan. Drizzle it on a bowl of beans and grain for a flavorful topping. Spread or drizzle it on a homemade pizza as a cheese substitute. Add just a dab to some steamed veggies. There are many ways to enjoy this delicious spread. Note: If you have a smaller blender like a Nutribullet, you might want to reduce this recipe in half. Since we make this in a large Vitamix, we make a larger quantity; if we only made ½ of this in the Vitamix, we find it hard to blend without taxing the blender. Enjoy!
