@THE EXAM ROOM BLACK BEAN BURGER: COOKING VIDEO WITH THE HAPPY VEGAN COUPLE
Throw out your old black bean burger recipes because this may become your new favorite! It definitely is ours! It is really tasty, holds together well, and is simple to make. Grab your food processer, pulse your ingredients, shape and bake your burgers and you're done. Of course, Georgie likes to up the flavor and nutrient profile with adding several burger condiments. This recipe was introduced in an Exam Room Podcast. This is a great podcast produced by Physicians for Responsible Medicine with host Chuck Carroll, the "Weight Loss Champion." To find the podcast, check out Pcrm.org/podcast. Here's the recipe for these great burgers: THE EXAM ROOM BLACK BEAN BURGER Prepared by the Happy Vegan Couple *for your health, use organic ingredients as much as possible* Ingredients ½ cup cilantro 1 clove garlic ½ cup walnuts ¼ cup oat flour 2 tbsp tahini 1 tbsp tomato paste 1 tbsp tamari ½ tsp salt ¼ tsp chili powder ¼ tsp smoked paprika 1 can (15 oz) black beans, drained and rinsed ½ cup cooked quinoa Top your burgers with your favorites such as: tomato, lettuce, pickle, red onion, sprouts, avocado…. HOW TO TOAST THE QUINOA BEFORE COOKING-THIS STEP ADDS EXTRA FLAVOR TO THE QUINOA Heat a sauce pan to medium. Pour in your desired amount of quinoa into the pan. As the quinoa begins to get hot, it will start to pop. Using a utensil, keep stirring the quinoa as it is popping. It will start to brown and you will smell a wonderful nutty aroma as it toasts. Remove from heat once you think it has toasted. HOW TO COOK THE QUINOA ONCE IT HAS BEEN TOASTED Once your quinoa has toasted, add water. Mix and bring to a boil. Once boiling, cover, reduce heat and simmer until water is absorbed. Typically, quinoa takes about 15 minutes to cook. For this recipe, we only need ½ cup of cooked quinoa. So start the toasting with ¼ cup dry quinoa, and then when it’s time to add the water, you add ½ cup of water to the pan. Cover and cook. You might enjoy making a larger amount of quinoa and have some in the fridge for other meals during your week. The water amount is double the dry amount of quinoa. Instructions 1. In a food processor fitted with an “S” blade, add the cilantro and pulse a couple of times to get a large chop. 2. Add the garlic and the walnuts and pulse a couple of times to chop the walnuts to pea size. Stir ingredients to mix. 3. Now add everything else except for the beans and the quinoa. This will include the oat flour, tahini, tomato paste, tamari, salt, chili powder and smoked paprika. Pulse a couple of times and then mix well. 4. Finally add the black beans and the quinoa and pulse a little to combine the ingredients. You want to have some texture so the burgers will hold together. Do not process to mush! 5. Next start making your burger patties. I like to shape them for the bread we use. Since we using sandwich bread typically, I will shape the burgers in a more oval shape to fit the bread. 6. Place your burgers on either a silicone pat or parchment paper laid on a baking tray. 7. Bake at 350 degrees for 18-20 minutes turning halfway through. Don’t overcook as they will get too dry. 8. Serve with your favorite garnishes on whole grain bread. Enjoy! Thank you to Lauren Kretzer who developed this recipe for PCRM.org. We’ve adapted it for our own cooking preferences.
