I've been busy playing with veggie recipes and created this winning combo, spiced chickpea and sweetcorn burger with lime mayonnaise and sticky, sweet caramelised red onions! All served in a crispy ciabatta roll. It just works on every level, plus it stands up to the test on the BBQ! Give it a go this weekend! Recipe Ingredients Veggie Patties 1 x 400 g tin of chickpeas 1 x 340 g tin of sweetcorn ½ a bunch of fresh coriander Salt & Pepper seasoning 1 teaspoon paprika 1 teaspoon ground coriander 1 teaspoon ground cumin 1 lemon Ground oats Lime Mayo 1 egg yolk 1 tsp English mustard 1 lime, zested and juiced 220ml of olive oil
