This two-bean casserole includes colorful vegetables and savory spices with a yogurt cornbread crust. This nutritious dish provides protein, fiber, vitamins and minerals to support daily healthy meal choices. Use leftover rice to make a rice crust instead of a cornbread crust. In a bowl, mix cooked rice, one egg, a splash of milk, cheese and pour on top of the casserole. Bake at 350 degrees F for about 30 minutes. Use half of the cornbread batter to top the casserole and the other half to make savory muffins! To add richness and protein to the cornbread muffins, mix in cheese before pouring the batter into the muffin pan.
