Vegan date and custard pudding Ingredients 200g/7 ounces of pitted dates 100g/3.5 ounces of shredded dried fruit 100g/7 ounces of sunflower seeds or nuts of choice 1 tsp bicarbonate of soda Boiling water ¾ cups brown or other sugar 1 ripe banana 1 tsp baking powder 1 tsp vanilla essence The rind of one orange or lemon 2 tablespoons coconut or other oil 1 and ¾ cup all-purpose flour ¼ cup raw oats 1 apple sliced 1 banana sliced For sauce 2 Tablespoons apricot jam 2 Tablespoons syrup of choice (I used strawberry) 500ml Hot custard (2 cups) Method Soak dates and shredded fruit in bicarb and enough boiling water to cover Mix sugar and oil Add vanilla and mix Add banana and mash and mix Add flour, baking powder, and oats and mix Add date mix, orange rind, and seeds or nuts and mix Make the sauce by adding jam and syrup and add up to 250ml (1cup) of boiling water and mix. Put banana slices and apple slices in the sauce Remove from sauce and arrange in a greased baking dish Pour batter over fruit and press down with a fork Bake at 160C 320F for one hour.
