Vegan Base loaf recipe Ingredients 400g/15 ounces of dry ingredients such as raisins, pitted dates or whatever you choose 2 tsp Bicarb Boiling water 1.5 cups of brown or yellow sugar 4 tbs of oil, such as coconut oil 2 ripe bananas 2 tsp of vanilla 2 tsp baking powder 3 cups of all purpose flour 1 cups of dry oats Rind of two oranges or lemons (optional) Nuts, seeds as you wish Method Set oven to 160C 320F Grease two baking tins Cover Raisins/dates with bicarb and enough boiling water to cover it. Let it stand for about 1 hour or more Mix sugar with oil Add bananas cut in slices and mash Add vanilla and mix Add flour, oats and baking powder and mix until wet Add Orange rind if you are using it Add wet mixture and seeds and mix well Spoon into baking tins about ¾ full Bake for one hour or until a knife comes out clean.
