✅Hyderabadi Mutton Dum Biryani - Step by Step with IMP TIPS👍 Ingredients – 3 Big or 6 Small Onion - Finely sliced until golden brown. For Mutton Marination: 1.5 kg Mutton cut into large pieces. 3 Tbsp Raw Papaya Paste 50 Gms Tbsp ginger garlic paste 2 Tbsp Red chilli powder (add as per your preference) Salt as per taste 1/2 tsp turmeric powder 1 Tbsp Coriander Powder 1 Tsp Cumin Powder 1 Tsp Garam Masala 1 Tsp Mace Powder (Javitri) ½ Tsp Nutmeg Powder (Jaiphal) Whole Garam Masala - 2 tsp caraway seeds - Shahi zeera 2-3 Bay Leaf – Tej Patta 7 - 8 cloves - Laung 2-3 cinnamon sticks – Dalchini 7 - 8 Green Cardamoms(Elaichi) Black Stone Flower – Pather Ke Phool/Dagad Phool 1 Tsp Black pepper corns - Kali Mirch 2-3 Star Anise - Chakri Phool Or Ustad Banne Nawab’s Chicken Dum Biryani Masala 1 bunch coriander leaves 1 bunch mint leaves 5 – 6 Slit green chilies 1 Cup Fried golden brown onions 2.5 Cups Yogurt 1 Cup Canola Oil 2 Tbsp Lemon juice 1.5 Kg - The Best Quality Basmati Rice 1 Tbsp Oil Caraway seeds/Shah Zeera – 1 Tsp Salt – 2- 3 Tsp 1 Bay leaf/Tej Patta 2-3 Black Cardamoms (Badi Elaichi) 4 - Green cardamom 3 - Cloves 1-2 Cinnamon Sticks For Dum - Dough for Sealing Fried Onions Chopped Mint Chopped Coriander Safforn Infused in Warm Milk 2-3 Tbsp Pure Desi Ghee 1/2 Tsp Rose Water ½ Tsp Kewra Water Biryani Tips - 1.A Perfect Biryani is a combination of good marination, half cooked basmati rice & perfect temperature 2.Never use burnt onions as there will be slight bitter taste in marination. Be careful while frying and remove them when they are slightly golden brown. You can refer to this video - https://www.youtube.com/watch?v=zsVeb2h32ng 3.Use the best quality basmati rice, don’t compromise on that. Just soak it for 30-35 mins, otherwise if the rice is oversoaked it will break while cooking. 4. Cook Rice in seasoned SALTY water. If the rice is overcooked and you give DUM the texture of the rice will be too soft (like gulatti, if you know what I mean) 5.Use natural meat tenderizers instead of store bought tenderizing powders. 6.Natural meat tenderizers - Raw papaya paste(best), Figs, Pineapple, Kiwis, (the vegetable enzymes will dissolve protein and connective tissues) Lemon (acidic liquids will soften muscle fibers) 7. When using tawa underneath, make sure it’s HOT so that the temperature doesn’t get tempered. 8. Make sure the steam doesn’t escape, keep an eye on it. 9. Every time you cook, you'll improvise so be PATIENT :-) 10. Embarrassing Biryani Story – when I was school, I made chicken biryani and used food color which I thought was orange but NO it was pink, you can imagine what a disaster “Pink Biryani” was!!
