@Chickpea Tuna Fritters / Buñuelos de Atún y Garbanzos
::Ingredients:: • 1-15 oz. can chickpeas, rinsed, drained and dried • 2 cans tuna, drained • 1 Tbsp. mustard • ½ cup mayonnaise • ¼ cup parsley, finely chopped • 1 medium red onion, diced small • ¼ cup dill relish • 1 ½ tsp. cayenne pepper • 1 ½ tsp. garlic powder • 2 lemon wedges • Salt & pepper to taste • ½ to 1 cup all-purpose flour • Garnishes: parsley, lemon slices and tartar sauce ::Directions:: 1. In a bowl, mash chickpeas until smooth. 2. In a separate bowl, mix together tuna, mustard, mayonnaise, parsley, onion, relish, cayenne pepper, garlic and juice from lemon wedges. 3. Mix well to blend. Season with salt and pepper. 4. Add flour, 1-2 tablespoons at a time, until thick enough to hold together. 5. Add chickpeas and mix well. Form small patties. 6. In a skillet over medium heat, add oil and heat for 30 seconds. 7. Add fritters to pan. Cook 1-2 minutes per side until golden brown. 8. Flip other side 1-2 minutes until golden brown. 9. Serve with parsley, lemon slices and tartar sauce. ::Tips:: • Substitutions: o Canned salmon or chicken instead of tuna. o White canned beans instead of chickpeas. o Cilantro instead of parsley. o Lime instead of lemon. ::Ingredientes:: • 1 lata (15 oz.) de garbanzos, enjuagados, escurridos y secos • 2 latas de atún, escurridas • 1 Cda. mostaza • ½ taza de mayonesa • ¼ taza de perejil, finamente picado • 1 cebolla roja mediana, cortada en cubitos pequeños • ¼ taza de condimento de eneldo • 1 ½ cdta. pimienta de cayena • 1 ½ cdta. polvo de ajo • 2 rodajas de limón • Sal y pimienta al gusto • ½ a 1 taza de harina para todo uso • Guarniciones: perejil, rodajas de limón y salsa tártara ::Preparación:: 1. En un tazón, triture los garbanzos hasta que estén suaves. 2. En un tazón aparte, mezcle atún, mostaza, mayonesa, perejil, cebolla, condimento, pimienta de cayena, ajo y jugo de rodajas de limón. 3. Mezcle bien. Condimente con sal y pimienta. 4. Agregue la harina, 1-2 cucharadas a la vez, hasta que esté lo suficientemente espesa como para mantenerla unida. 5. Agregue los garbanzos y mezcle bien. Forma buñuelos pequeños. 6. En una sartén a fuego medio, agregue aceite y caliente durante 30 segundos. 7. Agregue los buñuelos a la sartén. Cocine 1-2 minutos por lado hasta que estén doradas. 8. Voltee. Cocine 1-2 minutos hasta que esté dorada. 9. Serve con perejil, rodajas de limón y salsa tártara. ::Consejos:: • Sustituciones: o Salmón o pollo enlatado en lugar de atún. o Frijoles blancos enlatados en lugar de garbanzos. o Cilantro en lugar de perejil. o Lima en lugar de limón.
