Ingredients: 4 pounds mashed potatoes 3 tablespoons sea salt 1 cup milk 1/2 cup heavy cream 3 cloves garlic 6 tablespoons butter 1 3/4 teaspoon salt 1/2 cup Mascarpone cheese Green onions Wash, peel, and cut potatoes into cubes. Cover potatoes in a pan of cold water, making sure the water is one inch above the top of the potatoes. Add 3 tablespoons of salt. Heat on high until the water boils, then reduce to medium for 20 minutes. Drain water, then mix with a hand mixer. Add sauce slowly as you mix with your potatoes with a large spoon. Gently fold in Mascarpone cheese until fully incorporated. Garnish with green onions. For the Sauce: Combine milk, heavy cream, 1 3/4 salt, and minced garlic in a saucepan. Simmer on medium heat until the butter melts, then keep on low until you are ready to add to the potatoes.
