* 사용한 재료/도구 (파트너스 활동을 통해 일정액의 수수료를 제공받을 수 있음) - 작업대 : 에바 베이킹 매트(https://coupa.ng/bKZ2KJ) - 버터 : 프레지덩(https://coupa.ng/bKZ2Mu) - 베이킹파우더 : 밥스레드밀(https://coupa.ng/bKZ2JI) - 밀가루 : Swan's down - 커피 엑기스 : 제원(https://coupa.ng/bKZ2I7) - 인스턴트 커피 파우더 : 미국꺼 (한국에 없는거예요) ▶레시피 (8개 분량) - 스콘 : 박력분 200g, 버터 100g, 베이킹파우더 6g, 설탕 30g, 소금 1g, 우유 83g, 커피 엑기스 3g - 충전물 : 피칸 분태 27g, 머스코바도 30g(없으시면 흑설탕으로 대체하세요), 커피 파우더 2g 1. 박력분, 베이킹파우더, 설탕, 소금을 작업대 위에 덜고 잘 섞는다. 2. 깍뚝썰기한 차가운 버터를 가루류 위에 놓고 스크래퍼를 이용해 팥알~쌀알 크기로 다진다. 3. 가운데 홈을 파고 차가운 우유와 커피엑기스를 넣은 후 보슬보슬한 상태로 섞는다. 4. 스크래퍼로 눌러가며 한 덩어리로 만든 후 반 잘라 겹치는 작업을 3회 실시한다. 5. 덧가루를 뿌려 가며 반죽을 밀대로 밀어 가로 20cm, 세로 25cm 정도의 직사각형으로 만든다. 6. 충전물을 고루 뿌린 후 돌돌 말고 랩에 싸서 냉장고에서 단단해 질 때까지 1시간 이상 휴지시킨다. 7. 양 끝을 잘라내고 2~2.5cm 두께로 8조각으로 썬 후 180도 18분 정도 굽는다. Thank you :) ▶Recipe (8 scones) [Scone] 200 g cake flour 100g unsalted butter 6 g baking powder 30 g sugar 1 g of salt 83 g milk 3g coffee extract (use concentrated coffee syrup like Trablit) [Filling] 27 g chopped pecan 30g muscovado sugar (you can use dark brown sugar) 2g instant coffee powder 1) Cut butter into cubes about 1cm in size and store in the refrigerator until use. 2) Sift the flour, baking powder, sugar, and salt together on the work surface. 3) Put the butter on the flour and chop it with two scrapers. Cut it with the size of the lentil grain as a whole. * If you have a food processor, you can do the same thing far easier. Pulse the machine until the butter gets small. Chop the butter carefully so the size doesn't get too small. 3) Add cold milk and coffee extract. Mix the flour with the milk with scrappers. You must be careful not to overflow the milk. 4) Press the dough with your palm and scrapers and lump them together. At this time, you can see the butter grains in the dough and the temperature of the dough should be cool. Don't touch it with your hand too much. 5) Make it roughly square, cut it in half, and stack it on top. 6) Make a square shape like pressing with palm and scraper again, cut half, and stack on top again. * Repeat this process 3 times. 7) Roll out the dough into a rectangle with a width of 20 cm and a length of 25 cm. Using the additional bread flour to prevent sticking. 8) After sprinkling the filling evenly, roll the dough tightly, stick the edge to the rolled dough tightly, and let it rest in the refrigerator for at least 1 hour until it becomes hard. 9) Cut both ends, cut into 8 pieces of 2~2.5cm thick, and bake 180°C for 18 minutes.
