Described as a "savory pancake," Okonomiyaki is prepared out of a batter prepared out of flour, shredded cabbage, eggs, dashi/water, along with green onions, meat (commonly thin pork belly),grated nagaimo (a type of yam), octopus, squid, shrimp, other vegetables, cheese etc. It is further topped with a thick, sweet sauce(called the Okonomiyaki sauce), mayonnaise, aonori seaweed, and dried bonito flakes that dance in the heat of the hot-off-the-grill okonomiyaki. This dish is the most versatile and is found in various adaptations across Japan. The most famous among them are : Osaka Okonomiyaki, Hiroshima Okonomiyaki and Tokyo. his is why it get’s the name Okonomiyaki, “okonomi” meaning “As you like it” and “yaki” meaning grilled/fried/cooked
