Leeks simmered in wine is an easy, elegant (and vegan!) side dish for roasted chicken or fish, or just a table full of vegetables. Make it photogenic by twirling them up and placing a pan-seared fish filet on top. Learn how to cook leeks with wine and an aromatic herb broth. Chop leftovers and serve over ravioli. Ingredients below or at https://www.cookingcompaniontv.com/leekssimmeredinwine Leeks Simmered in Wine ====================== by Deborah Madison Ingredients: 2 tablespoons butter or olive oil 8 leeks, about an inch in diameter, trimmed, halved lengthwise and rinsed 1/2 cup dry white wine 1/2 teaspoon sea salt Aromatics: 2 bay leaves, 6 parsley sprigs, 3 thyme sprigs, 1/2 teaspoon peppercorns Freshly milled pepper chopped chervil, tarragon, or parsley, for garnish Recipe summary: Clean leeks and cut in half lengthwise. Heat 2 tbsp of oil in a large skillet over medium heat. Add leeks cut-side down and let them brown for a few minutes. Add wine, and cook until reduced to half. Add 2 cups of water, salt, and aromatics. Simmer 10-20 minutes partially covered until leeks are tender. Cook liquid until it's like a syrup. Then strain and pour over leeks.
