READ ME....... GUJIYA is a sweet dumpling made with refined flour and stuffed with khoya. It is common in North India, particularly in Bihar, Uttar Pradesh, Madhya Pradesh and Rajasthan. And it is very easy to prepare. Please have a look at the Recipe... Ingredients Serving 12-15 gujiyas For the dough: Refined flour (Maida) 2 cup Refined oil 3 table spn Salt a pinch Water 1/3rd cup For the stuffing Khoya (dried evaporated milk solids) 200 gms Shredded coconut 4 table spoon Charoli seeds 1 table spoon Raisins (kishmish) ½ table spoon Cashew nuts ( finely chopped) 1 table spoon Pistachios (finely chopped) ½ table spoon Cardamom powder ½ tea spoon Powdered sugar 1/3rd cup Ghee 1 table spoon How to prepare: Dough 1. Take the refined flour, salt in a bowl. 2. Add refined oil in the flour. 3. Now mix the ingredients with the finger tips to form bread crumbs like texture. 4. Then add the water in parts to form a smooth and firm dough. 5. Now cover the dough with moist cloth and keep it aside for 30 minutes. Stuffing: 1. Heat the pan and add 1 table spoon of ghee. 2. Now add grated khoya in to the pan and stir continuously on a slow flame, till it starts gathering around itself. 3. Switch off the flame and let it cool down. 4. Add powdered sugar, dry fruits, grated coconut, cardamom powder. 5. Check for the sugar. And keep it aside. Assembling and preparing gujhiyas 1. Divide the dough and make balls, cover with moist cloth. 2. Dust the rolling board with some flour. Dust each ball with a rolling pin to a small circle having diameter of 4-5cm. Don’t add too much flour while rolling. 3. Take a gujhiya maker and dust lightly with flour. Now keep the circle on the gujhiya maker and keep 1 tbl spoon of filling on one side of the circle. 4. Press the gujhiya maker nicely to seal the open edges.Trim the extra edges. 5. Prepare rest of the gujhiyas this way and arrange them well on a tray. 6. Now heat up the oil in a pan. Deep fry all the gujhiyas 3 or 4 at a time till it turns golden brown. 7. Now gujhiyas are ready to be served. Thank you!
