At LCS, our maple syrup program offers students a hands-on learning experience that combines environmental science, history, and chemistry. When temperatures rise above freezing during the day and drop below freezing at night, our students begin tapping maple trees, drilling holes and adding spiles to start the process of collecting sap. It takes about 40 pails of sap to make just one pail of syrup, which is a testament to the dedication and hard work of our students.
