Artichokes are high in antioxidants, making them incredible defenders against cancer, aging, heart disease, and illness. They boost the immune system and lower cholesterol. The high concentration of cynarin in artichokes not only affects cholesterol, but also can contribute to aiding in digestive health. Eating artichokes boost bile production, which is very beneficial to the health of your liver. The bile that your liver produces helps to remove dangerous toxins and digests fats. This helps to improve liver function. One artichoke contains approximately one forth of the average adult's daily fiber requirements. It is also packed with vitamin C, potassium, folic acid and magnesium. Artichokes are available in most markets all year round, with the peak months being March, April, and May. Before cooking your artichoke, make sure to cut off the stem, if your artichoke still has it attached. Wash your artichokes well to remove any dirt or sand hidden within the leaves. Fill a pot with warm water and boil on your stove. You can cut half a lemon to add to the artichokes to heighten the taste and give some flavor. Boil the artichokes for about 30 minutes. Whether you boil or steam, you can tell it's done when the petal near the center pulls out easily. Don't worry; the artichoke is one of the only foods where it's both proper and polite to eat with your fingers.
