In this video I show you what i eat in a week as a vegan. these recipes are easy to make and enjoy. smoothie ********* 1 cup frozen rasberries 1 frozen banana unsweetend almond milk 1 scoop vanilla protein powder jackfruit carnitas **************** Take 2 cans young green jackfruit in water or brine (NOT syrup) if you use brine make sure to rinse off well. cut the hard stems off. you only want the meaty like texture. Dice 1 green pepper & 1 yellow onion add to skillet with some a little oil. Season with salt & pepper towards the end add 2 tsp minced garlic. then add in the jackfruit, no need to shred it yet. Add in 1/2 cup veggie broth I like to use better than bouillan veggie paste. cover and let simmer for 10 mins. while that simmering make seasoning paste. Seasoning paste ******************** 1 1/2 TBS tomato paste 2 TBS soy sauce low sodium 2 TBS grape seed oil ( or what ever oil you choose) 2 tsp chilli powder 1/2 tsp oregano 1 tsp ground cumin 1/2 tsp sea salt 1/2 tsp smoke paprika 2 TBS coconut sugar add the paste into jackfruit mixture once done simmering then add in 1 tsp liquid smoke and juice of 1 lime. mix and let cook for 5 mins. stir frequently .Spread jackfruit on sheet pan on top of parchment paper and bake at 425 for 15-25 mins until browned and crispy. potatoes ********* take 2 large yukon gold potatoes and add sea salt, pepper, garlic powder, onion powder and a little water about 1/4 cup cover and let cook on low heat until tender. add more water if it starts to evaporate. cashew cream sauce ************************ 1 cup soake cashews (pour boiled water iver cahsew let sit for 30 mins to 1 hour and then sicard of water when done. add cashews to blender along with 3/4 cup water 1 tsp lemon juice 1/2 tsp minced garlic 1/2 tsp onion powder 1 tsp sea salt pinch of cayenne 2 TBS nutritional yeast Buffalo taquitos **************** saute red peppers and onions add 1 tsp minced garlic towards end. remove from oan add in 3 large yukon gold potatoes diced season with pepper, garlic powder, onion powder add some water over the top and cover let cook down until tender. add in 1 can rinsed and drained chickpeas and mash with potato masher leave a few chunks. add in 3/4 cup hot buffalo sauce and then add on to flour tortilla. line on baking sheet and bake at 425 for 15 mins. vegan smoked cheese ************************ https://avocadosandales.com/2014/10/09/our-favorite-sliceable-meltable-vegan-cheese/
