Some vegan cream cheeses will not work because the ingredients are diffrent like violife has a high coocnut oil and did not work when I tried to use it all though it taste amazing buy itself. Mix on low until smooth, then add in 1 can of coconut cream, if you don't have that then use coconut milk but it must be full fat. Add in zest of 1 lemon, 1/2 tsp lemon juice, 1 tsp vanilla extract or paste and a pinch of sea salt. Add in 2 1/2 TBS cornstarch and 1 TBS agar powder. If you want a less dense cheesecake and more creamy add leave out the agar powder. Mix until combined. Pour into graham cracker crust and then bake at 350 for 45-50 mins until or until the top is golden brown. Let cool completely then put in fridge for at least 4 hours or overnight.
