So for these vegan carnitas you will need a package of oyster mushrooms. I used the flat ones that look like little sting rays. Shred it with your hands then make the marinade. Add 3 TBS tomato paste, 4 TBS soy sauce, 4 TBS grape seed oil, 4 tsp chilli powder, 1 tsp oregano, 2 tsp cumin, 1 tsp sea salt, 1 tsp smoked paprika, and 4 TBS coconut sugar. Mix and pour over shredded mushrooms. Let sit while you saute half green pepper and half yellow onion. Once browned add in the mushrooms. Mix and let sit on one side for 5 mins until browned. Then flip over and let brown on the other side. Do this to each side twice on medium high heat. this wil help it get crispy. Next add on to a sheet pan on parchment paper onr non stick foil and bake at 425 for 15 mins.
