If you are looking for some delicous vegan fall inspired recipes that taste amazing and are still good for your body. Then this is the video for you. Vegan twiced baked cheesy broccoli stuffed potatoes ******************************************************** bake 4 russet potatoes let cool slice in half scoop contents out of potato and put in a bowl. season with salt, pepper and optional bacon seasoning by delicou. https://www.deliciou.com/products/bacon-seasoning make the cauliflower cheese sauce. add 2 cups steamed cauliflower to a blender, 1 cup non dairy milk, 2 tsp miced garlic, 1/4 c nutritional yeast, 1/2 tsp turmeric, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp baking seasoning and 1 tsp deliciou nacho seasoning (optional) 1/2 tsp sea salt( you might want to add more sea salt if you don't have the bacon and nacho seasoning. 1/4 tsp pepper and 1 tsp dijon mustard. blend pour slowly into potato mixture until its creay how you like it. i added all the cheese sauce because it thickens as it bakes. spoon the filling into the potato skins and bake at 400 for 15- 20 mins mushroom straganoff ************************ precook vegan pasta of choice i used gigli from trader joes. add 2 TBS veggie broth to skillet once hot toss in 1 yellow onion diced and some baby bella mushrooms. as it cooks you want to add more broth because it will evaporate. once cooked add in 1 tsp minced garlic and cook for 1 minute. remove from heat. in asauce pan add 1 cup non dairy milk, 1 cup full fat coocnut milk, 1 1/2 cup veggie broth, 2 TBS nutritonal yeast, 2 tsp soy sauce, 1/2 cup cooking wine, 2 tsp dried thyme, 3 TBS flour. Whisk and let thicken on medium heat then salt and pepper to taste. Add sauce to skillet with mushroom and onion pan and the pasta. Black bean soup ****************** Chop up 1 large sweet potato 2 large carrots 1 zuchinni 1 yellow onion 2 cloves miched garlic and add to instant pot. Add in 2 to 2 1/2 cups veggie broth and 2 tsp veggie paste. I use better than bouillan if you dont have this then add in regualr veggie broth. add 2- 3 bay leaves (optional) 1 can diced tomatoes, 1 small can of hot salsa(optional) 1 tsp ground cumin, 1 tsp chilli powder, 1/2 tsp oregano, 1/2 tsp pepper salt to taste when done. cook on instant pot for 15 minutes then take immerison blender and blend it up a little just so you can have some chunks and it will make it smoother. If you dont have an immerison blender ladle some of the soup into a blender and pour it back into the pot.
