The holidays are quickly approaching and so many are in search for some amazing vegan side dishes to impress their family and friends. So I thought i share a few of my favorites. In this video I make a vegan mac and cheese and corn bread stuffing along with a gravy because its not thanksgvign without gravy is it. I am also going to be tatse taste testing the gardein vegan stuffed turkey. Vegan mac and cheese ************************* Boil elbow macaroni noodles until al dente. My fav is barilla pasta. Then season with seasoned salt, pepper, and garlci powder. Add 2 cups vegan evaporated milk to sauce pan or regular non dairy milk, you can also use coconut milk. I got the vegan carnation evaporated milk form HEB but they also sale it on amazon for a cheap price. Add in some vegan cheese I used violife cheddar cream cheese and added in the entire block and a 1/2 bag of shredded daiya cheddar cheese. Whick and melt on the stove top then pour over noodles and add extra cheese shreds if you like. Cover with foil and bake at 350 for 30-35 mins. Cornbread apple sage sausage ******************************** Make corn bread, I used jiffy vegetarian and left out the egg. Add 1/4 cup melted dairy free butter, 2/3 cups water and 1 tbs egg replacer (optional). While the cornbread is baking add 4 stalks diced celery, 1 diced yellow onion, 1/2 red and green pepper diced into a skillet with a little melted butter. Let cook down and then remove from pan. Next add 2-3 vegan sausage links cut into quarters. I used field roast apple sage sausage. Brown in skillet with a little butter then add the peppers and onion mixture back in. Season with 3 TBS rubbed (ground) sage, 1/2 tsp fresh rosemary, 2 tsp fresh thyme, 1/2 tsp sea salt, 1/4 tsp pepper, and 2 tsp minced garlic. Let garlic cook for a minute then turn off heat. Add corn bread and 4 slices of stale bread to a bowl. I used whole ehat sandwich bread and dried it out in the toaster. Break it up into chunks and add everything to a large bowl. Slowly add in veggie broth until moist but not drowning in liquid. I added about 2 cups. I f your cornbread is dried out you will need to add more broth if its moist like mine because i made it in the same day you won't need as much. Mix and taste the mix add some more sea salt, I added 1 tsp of sea salt, 1 tsp paprika, 1/2 tsp garlic powder and 1/2 tsp slap ya mama cajun seasoning. Bake at 375 for 20-30 mins until top is golden brown. Vegan gravy ************** Add 2 cups veggie broth to sauce pan 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 TBS soy sauce, 3 TBS nutritional yeast and 1/4 C flour. Mix on low medium until it thickens. Addin fresh herbs. I added in 1/8 tsp frsh rosemary and 1/8 fresh thyme.
