It's essentially a place where he melds new world cooking techniques with ingredients that are often influenced by Asian cuisine. ➜➜Please subscribe for more food and travel vlogs! http://bit.ly/2qPhSAM Watch me eat é by José Andrés - Ridiculous 21 Course Dinner : http://lifeofl.in/joseE The 15 Courses: • Pomme Soufflée W/ Chives Creme Fresh Pomme souffle is a french fried potato. • Lobster Paloise W/ Mint Thai Basil • Fried Chicken Oyster Topped W/ Honey Mustard Powder This isn’t an oyster, it’s actually two small round pieces of dark meat on the back of the chicken near the thigh. • Striped Bass - Rye Bonji Soy Pickled Mustard Greens Bonji is derived from the korean word for “essence.” Bonji is fermented, cold pressed liquid seasoning - kind of like distilling whiskey. It tastes like soy sauce but with more depth and nuance and isn’t as salty. They make their own by hand in small batches. • Maine Sea Urchin And Hozon Chickpea Drizzled W/ Spanish Olive Oil Hozon is another one of David Chang's inventions. It’s fermented nuts, grains, or seeds. it’s name comes from the Japanese word meaning “preserve.” It's used the same technique for making miso. He invented these new flavors to try to understand umami and how to make flavors that are more delicious. In the process of doing so he made a lab that is dedicated to everything fermentation. • Ko Egg - Sturgeon Caviar W/ Sweet Potato Vinegar His special ko egg is slightly smoked. If you watch his show, he shows you how he makes his perfectly poached egg. • Beef - Au Poivre Also called pepper steak. It’s a steak that’s coated with cracked peppercorn and then cooked. Ko made their own rendition of this famous french dish by using aged steak and slightly searing it just a bit to get a hint of smoky flavor. This steak was a-maz-ing. • Razor Clam - Pineapple Basil This dish was an explosion of flavors. The razor clam was cooked perfectly. It wasn’t tough and chewy at all. This was a very creative dish. • Bouillabaisse - Potato Saffron • 12 Days Dried-Aged Lamb Leg With Preserved Citrus Along W/ Radish And Turnip • Concord Grapes Sorbet W/ Lemon Verbena And Meringue The momofuku twist is made from sheep's milk cheese w/ maple syrup and a hint of sea salt on top. • Foie Gras - Lycée Pine Nut Riesling Jelly This dish is both innovative and delicious. It’s unforgettable and the combination of ingredients is just a perfect marriage. This dish is easily their signature dish. Foie gras as a dessert is brilliant! once it touches your mouth, it immediately melts and you are hit with a huge burst of flavor. It paired perfectly with the lychee and pine nuts alongside the riesling jelly. I’m missing that dish already. If you are sitting at the bar you can watch them shave the frozen foie onto this dish. It looks like snow falling! • Wild Rice Ice Cream Topped With Puffed Toasted Wild Rice • Candied Kombu (Seaweed) • Chocolate Mint Fernet Branca Video Notes: If you haven’t watched Mind of A Chef, then you should go watch Season 1 on Netflix. It’s what introduced me to this restaurant in the first place. I ate there on Oct 2015. Back then, it was $175 a person, but now the price increased to $195 a person! That is crazy! I’ll show you the comparison of both times I visited. I love that restaurants are leaving you with a treat to take home. The entire restaurant experience continues to the next morning. This was a great treat for breakfast with some coffee in the morning. A great way to savor the meal I had just one last time.
