How to make mini vanilla cupcakes with buttercream icing, perfect to do whilst in lockdown! You can double the recipe to make more or normal sized cupcakes. Ingredients: 55g softened butter 55g caster sugar 55g self raising flour 1/4 tsp vanilla extract 1 large egg Buttercream: 50g butter 105g icing sugar 1/4 tsp vanilla extract If you need to make more buttercream, add in some icing sugar bit by bit. If it’s too thick add a teaspoon of butter at a time.
