Super easy to create this filling taco pie with beyond meat beef and tons of veggies. Beyond Meat Beef Taco Pie Recipe Ingredients: 1 package of Beyond Meat Beyond Beef Tortillas – amount depends on how big they are – I used smaller gluten free ones 1 onion chopped ¼ cup corn ½ red pepper chopped 1 tomato chopped 2 garlic cloves crushed 2 celery stalks chopped 2 large handfuls of spinach, chopped For the Cheese Sauce: 4 tbsp or more of nutritional yeast About ¼ cup of unflavoured, unsweetened plant milk ½ tsp lemon juice 1 tbsp vegan butter or margarine Turmeric, black pepper, salt to taste Smoked paprika Optional: Cayenne PLUS: 1 taco seasoning package or 1 tbsp of home make taco seasoning, link for that recipe is here: https://youtu.be/GzS3i1MNogo In a spice jar add: 1 tbsp chili powder ½ tsp garlic powder ¼ tsp onion powder 1/8 tsp cayenne powder ½ tsp dried oregano ½ tsp paprika or smoked paprika ½ tbsp. ground cumin Salt & pepper to taste Directions: Fry up Beyond meat in a frying pan over medium/high heat Once it turns darker red and is ready, transfer to a bowl and set aside. In pan with the beyond meat oil residual, fry up onion, garlic, celery, corn, red pepper, tomatoes Add spinach, taco seasoning and 2 cups of water Let simmer to evaporate the liquid. Assemble: Preheat oven to 350F Spray a cake pan with non stick spray Lay tortillas down to cover bottom surface Add some beyond meat mixture Pour some cheese sauce over Repeat until no more ingredients left Bake at 350F for 13-15 minutes Serve alone or with salad.
