This hearty immune boosting soup is packed with anti oxidants, and super flavourful. So many yummy things in it, from carrots, to ginger, to sweet potatoes and many more. Carrot Ginger Sweet Potato Soup – Vegan & Gluten Free & Oil Free Ingredients: 1-2 celery stalk, chopped 5 lbs of carrots (4 cups), peeled, and chopped 1 onion, chopped 2 tsp of garlic – or add however much you’d like..be careful, it’s very strong. Juice from ½ a lemon (about 2 tbsp) 1 can of coconut milk – light or full fat works 1 sweet potato, peeled and chopped 2 garlic cloves, minced 1 veggie bouillon cube 4 cups of water 1 tsp basil ½ tsp rosemary Optional: Cayenne Turmeric & black pepper Directions: In a large pot over medium/high heat, add some water. Add all ingredients except lemon juice. Bring to a boil, then reduce to low/medium heat, and let simmer until all veggies are soft. Once all veggies are fork tender and cooked, turn off heat. Add lemon juice. Either enjoy as is, or use an emmersion blender to make the soup super smooth and creamy. Optional: top with parsley Serve alone or with gluten free buns or crackers. Enjoy!
