Such an easy way to make cookies - using a pre made cake mix! This recipe is vegan, and gluten free. It uses flax eggs as an egg replacement. Cake Mix Cookies Ingredients: 1 Cake Mix – I used Betty Crocker Chocolate Gluten Free box mix 2 flax eggs – which is 2 tbsp of ground flax seeds mixed with 6 tbsp water 1/3 cup vegan butter – melted 3 tbsp water (as needed) 2 vegan candy canes Peppermint extract Directions Preheat oven to 350F. First, let’s make the flax eggs. Mix the 2 tbsp of ground flax seeds with 6 tbsp of water. Mix well and set aside to thicken up (will take about 10 minutes) In a large bowl, add package of cake mix Add melted vegan butter Add peppermint extract – a splash is fine, depends on how much you like Add flax eggs Mix well to see if water is needed. If dry, add up to 3 tbsp of water, until you get consistency of cookie dough that you can use your hands to roll balls. On a parchment/silicon mat lined baking tray, make golf ball size balls (or you can make smaller to get more cookies) Bake for about 11-15 minutes. Then crush 2 vegan candy canes by putting them into a sandwich bag and use a rolling pin to crush them When you insert a toothpick into the cookies, and it comes out clean, cookies are ready. As soon as you remove them from the oven, use a spoon and add some crushed candy canes, while pushing it down into the warm cookies to set. Let cool and enjoy!
