Pastry cream in this video is made with powder pudding. As I understand, powder pudding is not available in all parts of the world. In case you don't have access to powder pudding, you can use cornstarch or vegan custard powder. Below are ingredients for the pastry cream made with cornstarch. If you have powder pudding, just follow the producer's instructions. Ingredients: For the Pastry cream: 50 g cornstarch 4 tablespoons sugar 500 ml of soy milk (or almond or oat milk) 50 g vegan butter (margarine) half a teaspoon of agar-agar powder For choux pastry: 160 ml of water 150 ml of soy milk 30 g vegan butter (margarine) 1 pinch of salt 135 g flour + 1 g xanthan gum (or guar gum) 6-7 tablespoons of egg replacer Egg replacer: 36 g of tapioca 12 g of starch (corn or potato) 18 g baking powder 2 g xanthan gum (or guar gum) Add 2 teaspoons of egg replacer powder to 120 ml of aquafaba (chickpea water) For ganache: 50 g of dark chocolate 25 ml of soy milk Mama Veganka Facebook page https://www.facebook.com/mamaveganka/
