Vinegar Pie: Few ingredients and no stovetop cooking. This recipe reminds me a little more of lemon bars than lemon pie and I'm sure lemons were substituted for vinegar when they were available. Chess pie is sometimes called vinegar pie but it differs in that it has cornmeal and usually lemon. Ingredients: 3/4 cup sugar 3 whole eggs 2 tablespoons vinegar (or lemon) 1 teaspoon vanilla 1 stick butter 1 9" pie shell Instructions: Preheat oven to 350 F. Grease the bottom of a 9" pie plate. Melt the stick of butter. Mix together sugar, eggs, vinegar, vanilla and melted butter. Pour into pie crust and bake at 350 degrees for 35-40 minutes, or until a toothpick/knife comes out clean. Let cool completely before slicing.
