This Christmas Pudding Recipe is hot, rich and filled with wonderful flavors. Try it Now ! Serves approx. 15 Ingredients 4 cups of fresh bread crumbs 4 ripe bananas mashed 8Tbs stewed apples 3 cups of mixed dry fruit (I used black cuuants, sultanas, apricots and dates) 2 cups of brown sugar 4 Tsp of Bi carb of soda 4 Tbs milk 1 Tsp of cinnamon ½ Tsp of cardamom ¼ Tsp of cloves ¼ Tsp of nutmeg Directions In a small bowl add bi carb and milk together stir until dissolved. In a large bowl place bread crumbs, bi carb and milk, mashed bananas, stewed apples, mixed dry fruit, brown sugar and spices, mix until combined well. Place mixture into a buttered large steaming pot and cover with some buttered AL foil and place lid on top. Put into a large steamer or a large pot with a cake rack or saucer underneath and steam for 4-5 hours checking water level every 1 ½ hours top up with some boiling water if necessary. When finished cooking take out of the steamer and leave until it has cooled and remove from container and wrap in some plastic wrap and refrigerate. On Christmas day steam again for 2 hrs to warm it through again. When serving you can pour over a little brandy and light for the taste and great effect and presentation.
