Chocolate and Cardamom is a fantastic combo which will surprise your friends and family. WATCH THIS VIIDEO on How To Make Chocolate Ice Cream with Cardamom. Many of us enjoy a naughty chocolate experience. This Chocolate Ice Cream Recipe with a hint of Cardamom is just a great way to satisfy this desire. Try it! Makes 1 1/2 Pints or over 1 Ltr Ingredients ½ cup of cocoa (preferably dutch processed) 2tsp vanilla extract 1 1/3 cups/300ml/10floz milk 2 ½ cups/600ml/20floz pure cream 1 cup of refined sugar 6 egg yolks 6 cardamom pods bruised (Cardamom powder also) Directions Put ½ cup of Dutch processed cocoa into a saucepan and add a third of the milk. On a low heat mix cocoa until it’s smooth and there are no lumps. Add 2 tsp of Vanilla extract to the mixture. If the chocolate sauce is too thick, simply add some more of the milk or some water. In a second saucepan pour the remaining milk and the cream with 6 bruised cardamom pods and on a low heat bring up to just under a simmer. Then turn the heat off. While the cream mixture is on the stove, beat 1 cup of refined sugar with 6 egg yolks in a bowl to a creamy consistency. Add a third of the hot cream mixture to the egg and sugar bowl. Mix through and add this back to the cream mixture, then put it back on the stove and stir continuously on a low heat. Cook until it turns into a fine custard and you can run your finger across the back of the wooden spoon and the finger mark remains. When the custard is finished, pour a quarter of the custard into the chocolate mixture. Mix until smooth and add this back to the custard. Mix through and place the chocolate custard in the fridge overnight or a minimum of 5 hours. Take the chocolate custard out of the fridge and place it in a ice cream machine and process until soft serve consistency. Place in a container and freeze for 4 hours minimum before serving. If you don’t have an ice cream machine you can alternatively put the bowl into the freezer for 15 – 30 minutes, then take it out and beat until smooth again. Repeat this step until the mixture has a soft serve consistency. The reality with this naughty treat is that it does not take that long to make in cooking time….. you just have to have the patience to let it cool and freeze, but I guarantee that if you do you will be very well rewarded. Be careful though as you will suddenly find that you will have a lot more friends and family hanging around your fridge asking for more ice cream.
