I am addicted to this Mexican Enchiladas Recipe and have been for years. My friends have been knocked out by them as well, so BEWARE! Makes approx. 12 Ingredients 12 tortillas (corn or flour) made or bought 3 cans of beans (kidney, borlotti, black or pinto) 100g/3 ½ oz grated cheese 1 stick of celery finely chopped 1 carrot finely chopped 1 large red onion 3 cloves of garlic crushed Chilies to taste 1 tsp of oregano 1 tsp of cumin powder 1tbs of sugar 1 tsp of salt 3 tbs olive oil 3 tbs of tomato paste 2 cans of tomatoes 400g/14oz Directions In a medium saucepan heat olive oil on moderate to high heat and cook onions, garlic, chili, cumin, oregano, sugar and salt for 3 minutes until onions are translucent. Add tomato paste and cook for 1 minute Add the 2 cans of tomatoes and bring to a boil, turn heat down and let simmer for 1 hour stirring occasionally. Take tomato sauce of heat and blend until smooth. Pre-heat oven 180C/350F In a large bowl mix beans, ½ cup of the grated cheese, carrot, celery and 1 ½ cups of the tomato sauce. Oil two large baking trays and place a thin layer of sauce on the bottom of each tray. Then on a large plate place a small amount of the sauce on each tortilla and brush both sides. Fill each tortilla with the bean mix roll up and place in baking tray. Then cover enchiladas with more sauce and then sprinkle with the rest of the grated cheese. Place in the oven for 20-25 minutes take out and serve with your favorite salad and some sour cream. This Mexican Vegetarian Enchiladas Recipe is just so packed with yummy flavors it will become one of your favorites too I guarantee.
