Hi, I’m Martin Morales, I’m a chef and restaurateur. We run the stunning Casita Andina and Ceviche Soho, Andina and Ceviche Old St restaurants. These are pioneering Peruvian restaurants in London. http://cevicheuk.com/ http://andinalondon.com/ Leche De Tigre is more commonly known as Tiger's Milk and it's a crucial recipe in Peruvian cooking. It makes the base for Ceviche and is also used as a marinade to cold cook fish. It can be served in a glass and you can even throw in some Pisco if you want to serve this at a party or special occasion. Full of flavour, the dish is made up of lime juice, chillies, coriander and garlic. Scallops, crab and prawn finish this off, so you're left with a wonderful version of Peruvian prawn cocktail that looks really impressive! Do you have you own recipe for Tiger's Milk?
