The Veg Chowmein we make at home often turns soggy and limp, the vegetables in the Veg Chowmein too turn out to be soft and soggy while the noodles and vegetables in the Veg Chowmein we eat in a restaurant or on the road sides are quite crisp! Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN **************************************************************************** Recipe : Veg Chowmein Preparation Time: 40 minutes Cooking time: 10 minutes Serves: 3-4 Ingredients: 400g dry noodles 1 large capsicum, juliennes ¼ cabbage, shredded 2-3 carrots, juliennes 2 onions, sliced 2-3 spring onions, sliced 1 tsp tastemaker 1 tsp Chinese salt 1 tbsp soya sauce 1 tsp chili sauce 1 -2 tsp red chili paste 1 tbsp vinegar Salt to taste 1 tbsp chopped ginger 1 tbsp chopped garlic Pepper to taste 3 tbsp oil Method: Bring 2 litre water to a boil in a large pan. add 4 tsp salt and 1 tbsp oil. Add the noodles and cook for 2-3 minutes. Remove from heat and allow to stand for another 3 minutes. The noodles should be cooked al Dante and should be 75% cooked. Drain the noodles, wash well in cold water, drain. Add 2 tbsp oil and toss well. Spread the noodles and allow to ‘air’ for around 30 minutes to 1 hour. Heat the oil in a large pan till smoking hot. Add the chopped ginger and garlic and allow to turn golden. Add the sliced onions, carrots, capsicum and toss well for 2 minutes. Add the boiled noodles, the sauces, vinegar, tastemaker, Chinese salt, pepper powder, salt to taste and quickly toss to combine everything. Add the shredded cabbage and cook further for 2 minutes to crisp the noodles. Serve immediately.
