If you are looking for a delicious yet healthy snack recipe, then try out the Mexican Coins! The reason why this recipe is known as Mexican Coins is because all the ingredients used are native to Mexican Cuisine. For e.g. I have used beans, coloured bell peppers to make the Mexican Coins.
These Mexican Coins can be baked and can be easily made in a pan too. And I have shown you not only how to make Mexican Coins but also how to make the Hot Sauce for the Mexican Coins.

Recipe :
Mexican Coins
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Serves: 2
Ingredients :
2 tbs hung yoghurt
1 tbsp mayonnaise
3 tsp tomato ketchup
¼ cup Finely chopped colourful bell peppers
1 tsp Finely chopped garlic
½ cup Boiled rajma
¼ cup Sweet corn
¼ cup Finely chopped carrot
1 tsp Finely chopped parsley
¼ cup Finely chopped spring onion
1 tsp Oregano
1 tsp Chilli flakes
Salt as per taste
8 bread slices
1 cup shredded cheese
Chill flakes(to sprinkle on top)
2 tbsp Butter
Method :
In a large bowl, mixl, together all vegetables, seasonings, boiled rajma, half the cheese & corn and mix it well.
Take around 8 bread slices, use cookie cutter to cut the bread into round shape.
Take a smaller shape cookie cutter and cut in a smaller circle to make a ring from bread slice.
In a bowl, mix together the 2 tbsp hung yoghurt & mayonnaise. Add 3 tsp taco sauce, mix it well.
Butter one side of the bread and spread the sauce on he other side.
Place the ring over the sauce side and fill the cavity with the prepared stuffing.
Now add a spoonful of yoghurt sauce in vegetable stuffing(for binding) and mix it well.
Fill stuffing in each cavity of bread and top with some shredded cheese.
Place te coins in a pan, cover and cook over low heat till the underside is golden and the cheese melts.
Serve immediately.
Mexican Hot Recipe
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 4
Ingredients:
½ cup Tomato Puree
½ cup Water
2 tablespoons White Vinegar
4 tablespoons red Jalapeños finely minced
1 tsp Chili Powder
1 tsp onion powder
1 tsp Salt
1 tbsp Kashmiri chili powder
2 teaspoon Sugar
½ teaspoon Garlic Powder
Method:
Put all ingredients into a medium pan and whisk until smooth. Heat mixture over medium high heat. Bring to a boil. Reduce heat and continue to simmer for about 20 minutes, stirring often.
Remove from heat. When sauce is cool, pour into a sealed container and refrigerate until ready to use.
