These Christmas Cupcakes can be a wonderful gift too. These Christmas Cupcakes are delicious and will definitely be a treat for all tastebudes!

Recipe :
Christmas Cupcakes
Oats cupcakes
Preparation time: 20 mins. + overnight
Cooking time: 20 mins.
Serves: 4-6
Ingredients:
2 cups Oats
1½ cups curd
1cup Flour
1 cup Caster Sugar
2 medium Eggs
50g Butter
1tsp Baking soda
½tsp Salt
½cup(100g) Chocolate chips or raisins
Method:
Soak the oats in whisked curd for a 15 minutes. Pre-heat the oven to 200*C. Whisk eggs butter and sugar together till light and fluffy. Fold in the remaining ingredients gently, but not too much. Spoon the mixture into muffin trays which have muffin paper cups inserted into the depressions. Bake for 20 minutes or till done by checking the muffins with a skewer. If the skewer comes out clean the cake is done. When done remove from the oven. Remove the cakes and cool on a rack. Remove the paper cups and replace with fresh paper cups
Carrot Cupcakes
Ingredients
1 & ¼ cup flour
1 cup Plain yogurt Curd
¾ cup Grated carrot
¾ cup Sugar
¼ cup Oil
1 teaspoon Baking powder
½ teaspoon Baking soda
1 teaspoon Vanilla extract
A pinch of Salt
Method:
Preheat oven to 180 deg C.
Meanwhile wash, peel and grate carrots. Keep aside.
Sift flour, baking powder, baking soda and salt in a bowl.
In another mixing bowl, using a whisk mix well curd and oil.
Add sugar, vanilla and mix until it is dissolved.
Add the sifted flour mixture (and mix gently. Do not over mix.
Lastly add carrots and the mixture so that carrot is mixed with the batter.
Line a muffin tray with muffin liner (I use two for better looks) and pour batter until ¾th of it.
Make sure to spoon equal amount of the batter in all the muffin liners.
Bake for 15- 18 minutes or until a tooth pick inserted comes out clean.
Cool over a wire rack before storing.
Frosting
Ingredients:
1 cup Butter
3 cups icing sugar
1 tsp vanilla
Method:
Blend together all the ingredients till light and fluffy. Use as required.
