Recipe :
Dhaba Style Paneer Masala & Tandoori Roti
Ingredients:
250g Paneer
1 tsp Cumin seeds
1 tsp Black pepper corns
4-5 cloves
2 black cardamoms
1 cinnamon stick
3-4 whole red chilies
3 green chilies
2 large onions
3 large tomatoes
1” ginger
6-8 garlic cloves
3-4 green chilies
1 tsp turmeric powder
1 tsp Kashmiri red chili powder
1 tbsp coriander powder
1 tsp kasuri methi
1 tsp garam masala
Coriander leaves
Oil
1 tsp besan
2 cups atta
Salt
Method:
Cut paneer into 1” cubes. Sprinkle salt and turmeric on the paneer pieces.
Fry the paneer pieces in medium hot oil till lightly colored.
Remove and set aside.
Lightly dry roast the whole spices and grind to a smooth powder.
Heat 4 tbsp oil in a pan. Add 1 tsp cumin seeds and allow to crackle. Add 2 broken red chilies and then the chopped onions. Sauté the onions till golden in color.
Crush the ginger, garlic and the green chilies to a coarse paste.
Add the crushed mixture to the onions and mix well. Cook for a few minutes till fragrant. Add the turmeric powder, red chili powder, coriander powder, garam masala powder and mix well. Add chopped tomatoes, salt, ½ cup water and cook till the tomatoes are pulpy and the masala leaves fat.
Add the powdered spices, paneer, water and cook for 4-5 minutes till the paneer absorbs all the flavors and fat floats on top. Add kasuri methi. Remove from fore, serve garnished with coriander leaves.
To make tandoori roti, add a pinch of salt to the flour. Knead into a soft dough with water as required.
Invert a pressure cooker over the gas stove and heat the empty pressure cooker over it till the pressure cooker is very hot.
Roll out rotis, apply a little water on one side and stick to the inside walls of the pressure cooker. Once again, invert the pressure cooker over the gas. Allow the rotis to cook till brown specks appear.
Remove, apply butter and serve with Paneer Masala.
