Sharing today the recipe of a Shahi Lauki Kofta Curry! Kids and so many adults too, do not like to eat lauki/ ghia/ doodhi or bottle gourd! But serve them a Lauki Kofta made in a shahi way and they will love it! This Shahi Lauki Kofta Curry has a special stuffing of Apricot which is further stuffed with soaked Almonds! The Shahi flavour in the Lauki Kofta Curry also comes with the addition of nut paste and cream to the curry which gives it a richness. This Shahi Lauki Kofta Curry is a delicious way of taking your everyday Lauki Kofta curry a notch higher and can be a good serve for your parties too!

Recipe :
Shahi Lauki Kofta
Preparation Time: 20 minutes
Cooking Time: 25 minutes
Serves: 3-4
Ingredients:
500 grams lauki/ doodhi/ ghia (Bottle Gourd)
4 tomatoes, pureed
1 large onion, pureed
1 tbsp ginger garlic paste
red chilli powder
4 tbsp besan
1/2 tsp haldi
salt to taste
1 tsp kasuri methi
garam masala
dhania powder
2 tsp coriander leaves
8 dried apricots
8 almonds
Cumin seeds
2 tbsp cashew paste
¼ cup cream
1 bay leaf
1 black cardamom
1 tsp cumin seeds
3-4 green cardamom
Method:
Soak the almonds & Apricots in water for 3-4 hours. Peel the almonds. Deseed the apricot.
Grate the lauki. Add a tsp of salt and set aside for 5 minutes. Squeeze out all the moisture from the grated lauki and reserve the water.
To a bowl add the grated lauki, gram flour, red chilli powder, coriander powder, kasuri methi & mix well. Divide the mixture into 8 equal balls.
Place one peeled almond inside the apricot and place the apricot inside the kofta bal. Roll to make a round kofta.
Heat 2” oil in a pan for frying koftas.
Fry koftas till medium brown over medium heat and set aside.
Heat 3 tbsp fresh oil. Add the cumin seeds, bay leaf, black cardamom, green cardamoms and allow to splutter.
Add the onion puree and sauté till light brown.
Add the red chilli powder, turmeric powder and mix well. Add the ginger garlic paste and cook for 3-4 minutes
Add tomato puree and sauté till medium brown and oil oozes out over the masala.
Add all the spices, the strained water from grated lauki and mix well.
Add 1 cup water, 2-3 tbsp cashew nut paste and mix well. Bring to a boil. Add the koftas and cook for 1-2 minutes. Add the cream and mix well. Simmer for 3-4 minutes. Remove from heat and serve.
