Katlama Recipe I Deep Fried Desi Pizza I Lahore Street Food I Qatlama I कतलामा I Pankaj Bhadouria Ever heard of Katlama? Katlama or Qatlama is a famous Lahore street food. It is also called a desi pizza! Katlama is a fried dough puri that has a coating of a spiced besan batter on one side only. The toppings for this desi pizza- katlama is soaked urad dal and coriander seeds! These spices add a nice crunch and nuttiness to the Katlama. The recipe I have shared for the katlama makes for five 12” katlama. Katlama is cut into wedges and served just like that or sometimes with chutney, raita or halwa too. Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN **************************************************************************** Katlama Preparation Time: 20 minutes Cooking Time: 6 -7 minutes each Serves: 4-5 Ingredients: Ingredients for Dough: 2 cups Flour ½ tsp Salt 2 tbsp Oil For coating: 1 tbsp Kashmiri Red Chilli powder ¼ tsp Red food colour Salt to taste 4 tbsp crushed coriander seeds ½ cup soaked urad dal with skin ¼ cup anardana 1 tsp cumin seeds 1 tsp crushed black pepper 1 cup besan Oil for deep frying METHOD: In a bowl take the flour, salt and add water slowly to knead to a soft, smooth dough. Add the water and knead again till all the oil is incorporated. Rest for 30 minutes. In a bowl add the besan, red chilli powder, salt, cumin seeds, carom seeds and pomegranate Heat 1” oil in a large pan. Make a ball from dough and roll it just like a chapatti now make marks with the help of fork or knife so that oil can pass through from it Now coat it with the besan paste, sprinkle soaked urad dal, crushed coriander seeds. Pick it up carefully and put the non-coated side in medium heated oil wait for 3-4 minutes till one side is cooked than turn the other side down and let it cook till the besan coating is well cooked. Remove and serve with chutney, raita or halwa.
