Take Aloo Gobi Matar ki Sabji to Next Level with 3 Simple Tweaks! I आलू गोभी मटर I Pankaj Bhadouria Sharing today a winter special Aloo Gobi Matar ki Sabji! This Aloo Gobi Matar ki Sabji is neither a restaurant style Aloo Gobi Matar ki Sabji, nor a dhaba style or restaurant style one but a Pankaj special Aloo Gobi Matar ki Sabji! I like to use new potatoes and fresh green peas and not frozen ones to make this Aloo Gobi Matar ki Sabji. I like to fry the potatoes and cauliflower and blanch the peas to make my Aloo Gobi Matar ki Sabji. New potatoes fry crisper that old potatoes and the fresh peas are sweeter in taste and the blanching enhances their colour. Join this channel to get access to perks: https://www.youtube.com/channel/UCA34Z3lq8FozSQzDHsSLcmQ/join Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN ***************************************************************************** Recipe : Aloo Gobi Matar ki Sabji Preparation time: 15 minutes Cooking time: 20 minutes Serves: 3-4 Ingredients: 4 medium sized potatoes 1 gobi 1 cup shelled peas 2 medium onions, sliced 4 tomatoes, sliced 6-7 cloves garlic 1 ½” ginger 3-4 green chilies Oil to fry ½ tsp cumin seeds ¼ tsp asafetida ½ tsp turmeric powder 1 tsp Kashmiri red chili powder 1 tsp coriander powder 1 tsp garam masala powder 1 tsp kasuri methi 2 tbsp chopped coriander Method: Scrape the potatoes, wash and cut into half. Cut further into ½” thick slices. Cut cauliflower into florets. Shell the peas. Boil 2 cups water and blanch the peas for 30 seconds and refresh immediately in cold water. Heat 2” oil in a pan. Fry the potatoes till golden and remove. Fry the cauliflower till lightly golden and remove. Heat 3 tbsp oil in a pan. add the cumin seeds, asafetida and allow to crackle. Add the sliced onions and sauté till lightly golden. Meanwhile, crush the ginger, garlic, green chilies with a pinch of salt in a mortar and pestle. Add the paste to the onions and sauté till fragrant. Add the powdered spices and give a mix. Add the sliced tomatoes, salt to taste and mix well. Cover and cook for just 2 minutes. Add 2 tbsp water, mix, add the fried potatoes, cauliflower and blanched peas. Mix well, cover and cook for 3-4 minutes. Add crushed kasuri methi, chopped coriander, mix well and serve.
