Recipe :
Dhaba Style Egg Keema Masala
Preparation Time: 20 minutes
Cooking time: 20 minutes
Serves: 3-4
Ingredients:
8 Eggs
1 tbsp White Vinegar
For the Dhaba Masala:
2 tbsp Coriander Seeds
1 tbsp Cumin Seeds
1 tbsp black peppercorns
2 Kashmiri red chillies
1 hot chilli
1 tbsp Kasuri Methi
For Green Masala:
2 Green Chillies
6 Cloves of Garlic
1 inch of Ginger
1 bunch coriander stems
¼ cup Water
For keema Masala:
2 Medium Onions
4-5 Tomatoes
2 tbsp oil
2 tbsp Butter
1/2 tsp Turmeric powder
1/2 tsp Kashmiri Red Chili Powder
Salt to taste
Finely Chopped Coriander
1 Cup Peas (optional)
Method:
In a deep pan, place the eggs and cover the eggs with water.
Add 1 tbsp white vinegar to the water and bring to a boil. Boil the eggs for 15 minutes till you get hard boiled eggs.
Remove the eggs to ice cold water and peel the eggs.
Reserve 1 egg for garnish and grate the remaining eggs.
Lightly roast the coriander seeds, cumin seeds, red chilies, pepper corns till lightly colored and fragrant. Add the kasuri meti, cool and grind to a fine powder.
Grind together the ingredients for the green masala.
Heat the butter and oil in a pan.
Add the chopped onions and saute till golden. Add the powdered spices and mix well. Add the chopped tomatoes, 1 tbsp roasted masala and kmix well. Cook till the tomatoes are pulpy and the oil floats on top.
Add 1 cup water, grated eggs, mix well. Cover and cook for 7-8 minutes till the masala is cooked well.
Finally sprinkle ½ tsp roasted dhaba masala and add chopped coriander leaves.
Serve garnished with halved boiled egg.
