Recipe :
Kurkuri Bhindi
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
250g Bhindi (okra)
½ cup besan
2 tbsp rice flour
2 tbsp corn flour
Salt to taste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp cumin powder
1 tsp garam masala powder
¼ tsp carom seeds
1 tbsp amchur powder
Oil to fry.
Method:
Wash, wipe and slice the bhindi longitudinally into 6 pieces.
Mix all the other ingredients.
Add the besan mixture to the bhindi and toss well. Rest for 5 minutes and toss again.
Heat 2” oil in a pan. Add the bhindi to hot oil and fry till golden crisp.
Fry in batches.
Remove from the oil. Serve sprinkled with chaat masala or serve as a chaat topped with dahi, chutneys, pomegranate seeds, chopped coriander.
