These salads and dressings after introducing to my family, both my husband and daughter ask for these every alternate days. Showing you 4 recipes ideas - papaya salad, carrot salad, peanut dressing & sesame dressing.
Ingredients :
For Raw Papaya Salad:-
1/2 Raw Papaya (peal off its skin and cut into juliennes)
Cucumber (thinly sliced)
Purple Cabbage (chopped)
Carrot (cut into juliennes)
Red / Green Bell Peppers (thinly sliced)
Handful of Coriander Leaves
Mint Leaves
For Dressing:-
1/4 cup mildly roasted Peanuts
1/2 tbs Jaggery Powder (alternatively Honey can be used)
Salt as per taste
Coriander Stems (optional)
1/2 Green Chilli
1 finely chopped small Ginger Knob
1/2 Lemon Juice
2-3 spoon Water
Coarsely crushed Peanuts
For Carrot & Nut Salad:-
Finely Shredded Carrot
Chopped Cucumber
Chopped Purple Cabbage
Chopped Red Bell Peppers
Handful of Coriander Leaves
Mint Leaves
1 tbs mildly roasted Almonds
1 tbs mildly roasted Cashews
1 tbs mildly roasted Pistachios
1 tbs mildly roasted Raisins
For Dressing:-
3 tbs mildly roasted White Sesame Seeds
Salt as per taste
1/2 tbs Jaggery Powder (alternatively Honey can be used)
1/2 Green Chilli
1 finely chopped small Ginger Knob
1/2 Lemon Juice
2-3 spoon Water
Method :
To Make Raw Papaya Salad:-
In a mixing bowl, take 1/2 Raw Papaya & Carrot cut into juliennes
Add thinly sliced Cucumber, chopped Purple Cabbage & Red Bell Peppers
Add handful of Coriander Leaves
Add few Mint Leaves and mix it
To Make Dressing:-
In a mixie, take 1/4 cup mildly roasted Peanuts
Add 1/2 tbs Jaggery Powder
Add Salt as per taste
Add Coriander Stems (optional)
Add 1/2 Green Chilli
Add a finely chopped small Ginger Knob
Add 1/2 Lemon Juice
Add 2-3 spoon Water
Churn to make thick paste
Serve salad in a plate and dressing in a small bowl
Garnish with some roasted peanuts
To Make Carrot & Nut Salad:-
In a mixing bowl, take Finely Shredded Carrot
Add Chopped Cucumber
Add Chopped Purple Cabbage
Add Chopped Red Bell Peppers
Add handful of Coriander Leaves
Add few Mint Leaves
Add mildly roasted Nuts (Almonds, Cashews, Pistachios & Raisins - 1 tbs each)
Mix everything well
To Make Dressing:-
In a mixie, take 3 tbs mildly roasted White Sesame Seeds
Add Salt as per taste
Add 1/2 tbs Jaggery Powder
Add 1/2 Green Chilli
Add 1 finely chopped small Ginger Knob
Add 1/2 Lemon Juice
Add 2-3 spoon Water
Churn to make thick paste
Serve salad in a plate and dressing in a small bowl
Garnish with some roasted Sesame Seeds
