HARIYALI ALOO
When you combine so many green leafy vegetables, then you can create a delicious aloo sabzi with baby potatoes. This is the best time for this recipe-
Ingredients :
1 bunch Mint Leaves
1 bunch Spinach
1 bunch Coriander Leaves
1 bunch Green Garlic Leaves
3-4 Ice Cubes
1/2 Lemon Juice
1 tbs Ghee
1 tsp Cumin Seeds
10-12 boiled Baby Potatoes
2-3 finely chopped Garlic Cloves
1 finely chopped small Ginger Knob
Finely chopped Green Chillies
1/2 spoon Gram Flour
1/2 tsp Turmeric Powder
1 tsp Coriander Powder
1/2 tsp Garam Masala
Salt as per taste
Chilli Flakes
Fresh Cream
Method :
In a mixer jar, take 1 bunch Mint Leaves, 1 bunch Spinach, 1 bunch Coriander Leaves & 1 bunch Green Garlic Leaves
Add 3-4 Ice Cubes & Lemon Juice to help keep leafy veggies green
Churn it to make fine puree
Further heat 1 tbs Ghee in a pan
Add 1 tsp Cumin Seeds
Add 10-12 boiled Baby Potatoes
Add Salt as per taste
Toss them well until light golden-brown
Transfer fried potatoes on a plate
Add 2-3 finely chopped Garlic Cloves in the same pan
Add 1 finely chopped small Ginger Knob
Add finely chopped Green Chillies
Add 1/2 spoon Gram Flour & fry well
Add vegetable puree and turn the heat slow
Add 1 tsp Coriander Powder
Add 1/2 tsp Turmeric Powder
Add 1/2 tsp Garam Masala
Add Salt as per taste
Cover the lid and cook for 5 min
Then add fried aloo and cook for another 8-10 min
Take the sabji on serving plate
Sprinkle Chilli Flakes & top with Fresh Cream
Enjoy Super Delicious Hariyali Aloo
